
Onion soup
When the weather turns to colder, we change salads to soups. I love them. Not just because a lot of them are easy, delicious, and hot - which is quite a nice thing in a chilly weather - but it seems to warm our souls too.
The onion soup is one of my favourites, so I show you how I prepare it.

Ingredients
- 3 onions
- 1 glass of water to caramelize
- 10 g butter
- 1 spoon of olive oil
- 2 liter broth / water + broth cube
- To taste salt, pepper, nutmeg, chili, ginger
- To taste grated cheese (the kind you like)
Method
Peel off the onions and cut them into thin slices. It's important because in this way the onion can become tender in less time.
Melt the butter with the olive oil in a pan and start to caramelize the onion.
Stir it several times, but also let it burn a little bit. Then add a little water and repeat the process until you get a nice brown onion.
When you have the color, season it and add the broth to it.
After reaching the boiling point, cook it during 30-40 minutes on low heat.
Extra suggestion: If you like cheese, add some grated cheese to it and eat it with some garlic toast.
