Pasta a la Sofi (en)

I love pasta. It's a variable ingredient that can be easily adapted to our mood and the things that we have in the fridge.
The Pasta a la Sofi is one of my favourites. It's very easy and delicious.

Ingredients

250 g spaghetti pasta
10-15 asparagus (thinner ones)
A half onion
100 ml cooking cream ( it can be more if you like more creamy)
100 g serrano ham
To taste salt, pepper, nutmeg
8-10 pieces dried tomatoes (optional)

Method

Preparations for beginners (optional): - chop the onion -clean and cook asparagus, dip them in cold water and them into small pieces - cut the serrano ham too

Put some water to boil with a pinch of salt in a cooking pot.

Until the water gets to boil, clean the asparagus and chop the onion into small pieces.

When the water is ready put the asparagus into it and cook them during 10 minutes. Meanwhile sauté the onion in a pan in olive oil.

Once the asparagus are cooked, dip them in cold water (in this way they don't lose their beautiful green color) and cut them into small pieces.

Cook the pasta in the water of the asparagus according to the instructions on the package. (Cooking the pasta in that water will not only save time, but the pasta will have an extra taste.)

When the onions are almost ready, add the asparagus sauté them together for a few minutes, and add the cream into the frying pan too. Cook them together at low temperature until the cream become thicker.

When it's ready mix it with the pasta, add some serrano ham and dried tomatoes to it, and bon appetite!
